Roasted Rutabaga “Fries”

Since the SIBO Specific Diet is quite limiting, I was determined to try new foods. I was beginning to feel so overwhelmed by all of the stuff I could NOT eat, so I looked very carefully for foods I could eat. A rutabaga is given a green light after you have gotten over the initial SIBO symptoms, and it happened to be a food I had heard of but never had or if I did I didn’t know it.

I didn’t really know what a rutabaga was or what it looked like, so I asked a nice man working in the produce section of my local grocery store and he pointed them out to me. They are not pretty but they are good in the end!

I bought one, cleaned and peeled it and experimented. I have cooked them several other ways and this recipe is a favorite. Kids and adults love the rutabaga fries!

Preheat oven to 400 or 425 depending on oven strength. Clean and peel 1 large rutabaga with a carrot peeler (they have a thing layer of skin). Slice the rutabaga into thin rectangles.

In a large bowl combine:

– 1 large sliced rutabaga

– 1 1/2 tbsp olive oil

– 1 tsp rosemary

– sea salt and pepper to taste

Massage the oil and seasoning with your hands and then place the rutabaga slices on a baking sheet. Roast for 30 – 45 minutes until browning on tips.
